Ingredients

Quick Applesauce

  • 4 medium Granny Smith Apples Peeled and roughly chopped
  • 1 cup Water

Banana Muffins

  • 1.5 cups Wheat Bran
  • 1.5 cups All Purpose Flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1/2 tsp Baking powder
  • 1/2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 2/3 cup Dark brown sugar
  • 1 cup Wild Blueberries
  • 1 cup Applesauce homemade if possible
  • 3 Large eggs
  • 1 tbsp Vanilla extract
  • 5 Overripe bananas mashed

Instructions

  • Peel and chop the apples and place them in a pot with the water.

  • Preheat your oven to 325 F.
  • Pour your applesauce, brown sugar, eggs, and vanilla extract into the bowl of your stand mixer.
