Pesto
- 2 cups Baby spinach
- 1 cup Fresh basil
- 2/3 cup Raw pine nuts
- 1/2 cup Grated parmesan
- 1/4 tsp Kosher salt
- 2 cloves Garlic
- 1/2 cup Extra virgin olive oil
Linguine
- 1 box Linguine (~500g)
- Water
- Sea salt to taste
Smoked Salmon Pesto Pasta
- 2 cloves Garlic minced
- 2 tbsp Extra virgin olive oil
- 1 pinch Chili flakes
- 1 Lemon juiced
- 400 grams Smoked salmon
- 1/2 cup Pasta water reserved
Smoked Salmon
Cook garlic and oil on medium heat for 2 minutes.
Add smoked salmon and cook for 5 minutes.
Add chili flakes and lemon juice and mix.
Linguine
Place a large pot 3/4 full with water on high heat.
After it is boiling, add a healthy amount of sea salt.
Add the linguine and cook for 10 minutes until al dente.
Reserve 1/2 cup of the pasta water, then drain the pasta.
Pesto Linguine with Smoked Salmon
Add linguine, pesto, and pasta water to the pan with the smoked salmon then mix.
Cook for an additional 1-2 minutes until the pasta water is absorbed.
