Ingredients

Pesto

  • 2 cups Baby spinach
  • 1 cup Fresh basil
  • 2/3 cup Raw pine nuts
  • 1/2 cup Grated parmesan
  • 1/4 tsp Kosher salt
  • 2 cloves Garlic
  • 1/2 cup Extra virgin olive oil

Linguine

  • 1 box Linguine (~500g)
  • Water
  • Sea salt to taste

Smoked Salmon Pesto Pasta

  • 2 cloves Garlic minced
  • 2 tbsp Extra virgin olive oil
  • 1 pinch Chili flakes
  • 1 Lemon juiced
  • 400 grams Smoked salmon
  • 1/2 cup Pasta water reserved

Instructions

    Smoked Salmon

    • Cook garlic and oil on medium heat for 2 minutes.

    • Add smoked salmon and cook for 5 minutes.

    Linguine

    • Place a large pot 3/4 full with water on high heat.
    • After it is boiling, add a healthy amount of sea salt.
    • Add the linguine and cook for 10 minutes until al dente.
    • Reserve 1/2 cup of the pasta water, then drain the pasta.

    • Add linguine, pesto, and pasta water to the pan with the smoked salmon then mix.
