Apricot Sauce
- 1/2 cup Passata
- 1 tsp Apple cider vinegar
- 3 cloves Garlic
- 1/4 cup Lemon juice
- 1/8 tsp Kosher salt
- 1 cup Brown sugar
- 1 cup Apricot jam
- 1/4 cup Soy sauce
Chicken
- 2 lbs Chicken drumsticks around 12
- 2 tbsp Olive oil
Apricot Sauce
Mince the garlic and mix all ingredients together in a small sauce pan.
Cook on medium heat for 10 minutes, mixing occasionally, until the sugar and jam solids are dissolved.
Remove from the heat and set aside.
Chicken
Preheat the oven to 425 F.
Heat the oil on medium high in a large heavy bottomed pan.
Once the oil is hot, place the chicken drumsticks in the pan and cook until browned, 10 minutes.
Turn over and cook until the other side is browned, 10 minutes.
Chicken with Apricot Sauce
Pour the prepared sauce over the drumsticks.
Turn them over in the sauce and cover with the lid.
Place in the oven on the middle rack and cook for 30 minutes until cooked through.
Remove the chicken from the pan and set aside.
On medium heat, cook the sauce an additional 5 minutes until it has thickened. Place the chicken back in the pan and serve.
