Apricot Chicken Drumsticks

These Apricot Chicken Drumsticks are the perfect contrast of acid and sweet. The tomato, apple cider vinegar, and lemon juice, balance beautifully with the brown sugar and apricot jam, and there is an umami element from the soy sauce and caramelized chicken skin. It is a beautifully complex dish completed within an hour and 10 minutes. Despite the many ingredients in this recipe, it is extremely easy to put together and prepare. Equipment

  • Heavy bottomed pan with lid (I like to use my Le Creuset Braiser)
  • Tongs

Ingredients

Apricot Sauce

  • 1/2 cup Passata
  • 1 tsp Apple cider vinegar
  • 3 cloves Garlic
  • 1/4 cup Lemon juice
  • 1/8 tsp Kosher salt
  • 1 cup Brown sugar
  • 1 cup Apricot jam
  • 1/4 cup Soy sauce

Chicken

  • 2 lbs Chicken drumsticks around 12
  • 2 tbsp Olive oil

Instructions

  • Mince the garlic and mix all ingredients together in a small sauce pan.

  • Cook on medium heat for 10 minutes, mixing occasionally, until the sugar and jam solids are dissolved.

  • Remove from the heat and set aside.

Chicken

  • Preheat the oven to 425 F.
  • Heat the oil on medium high in a large heavy bottomed pan.
  • Once the oil is hot, place the chicken drumsticks in the pan and cook until browned, 10 minutes.

  • Pour the prepared sauce over the drumsticks.
