Easy Avocado Toast with Fried Egg and Mushrooms

This Easy Avocado Toast recipe takes the prolific avocado toast to another level. The combination of creamy avocado, savoury woody mushrooms, and indulgent fried egg, all on top of nutty whole wheat bread, gives you the kind of satisfying bite normally only found in a time consuming meal. I’ve eaten this avocado toast for breakfast, lunch, even dinner when I want something light! It truly is versatile.
Despite having multiple steps, this is a quick meal that I think will soon become a regular in your house.

INGREDIENTS
These ingredients can all be easily sourced at your local grocer. Just ensure that your avocado is nice and ripe with dark skin and a slight give when pressed. An underripe avocado has no flavour, and will undermine this entire dish.
- 3 Crimini mushrooms
- 1 1/2 tbsp Extra virgin olive oil, divided
- 1/2 tsp Fresh thyme
- 1 Clove of garlic
- 1/2 Avocado
- 2 Slices of whole wheat/grain bread
- 2 Eggs
- pinch Chilli powder
- pinch Kosher salt
- sprinkle Fleur de Sel
HOW SHOULD I USE THE THYME?
Fresh thyme has tiny little leaves on a long stem. It’s quite easy to remove the leaves from this beautiful, fragrant herb. Just hold it by the top in one hand, and with your other gently pinch the tip, and gently pull down the stem gathering the leaves as you go.
WHAT KIND OF MUSHROOMS SHOULD I USE?
I like to use Crimini mushrooms in most of my cooking. These are also known as Baby Bella, named after Portabella Mushrooms. They have a lovely nutty flavour that I find adds something special to every dish they are used in.
HOW SHOULD I COOK MY EGGS?
I like to make my eggs either fried or over easy depending on my mood, but you can also make a beautiful sunny side up with runny yolk to place on top.
WHAT IS THE DIFFERENCE BETWEEN FLEUR DE SEL AND SEA SALT?
Fleur de Sel (flower of salt) is sea salt. However, unlike coarse or fine sea salt, it has a flaked texture as a result of crystallization on the surface of the sea water as it evaporates. It is harvested by hand, and is an ideal finishing salt because it’s light texture adds a slight taste of salt without being excessively heavy.

- Chef’s Knife – A good sharp chef’s knife is key when doing any chopping/cutting. You want something heavy enough that the weight will assist you in chopping, but not so heavy that it’s hard to use. I like this mid range option from J.A Henkels.
- Cutting Board – While I enjoy using wood cutting boards to display food, I like to chop and prep on a BPA free plastic board that I can toss in the dishwasher after use. I am a big fan of OXO products, including their non slip cutting board.

COOKING DIRECTIONS
I absolutely love this dish. It’s quick, hearty, and satisfying. You can prepare your avocado, toss your bread in the toaster, then use two different pans to sautee your mushrooms while you fry your egg, making this meal almost as quick as putting together a cold sandwich (but much more delicious!).
MAKE AHEAD/STORAGE
Luckily this meal is extremely quick to prepare, because it cannot be made in advance, and would not be be tasty if stored.

Easy Avocado Toast
Equipment
- Cutting Board
- Pan
- Spatula
- Knife
Ingredients
- 3 Crimini mushrooms
- 1 1/2 tbsp Extra virgin olive oil divided
- 1/2 tsp Fresh thyme
- 1 clove Garlic
- 1/2 Avocado
- 2 slices Whole wheat/grain bread
- 2 Eggs
- pinch Chlli powder
- pinch Kosher salt
- sprinkle Fleur de sel
Instructions
SAUTEED MUSHROOMS WITH THYME
- Thinly slice your mushrooms and dice your garlic.
- Add 1 tbsp oil to a pan on medium heat.
- When the oil is glistening, add your mushrooms and garlic. Cook until your mushrooms have released their water, and are turning nice and golden brown: 3-4 minutes.
- De stem your thyme and toss it in with your mushrooms.
- Mix your thyme and mushrooms together and cook for a minute more, then remove from the heat and set aside.
FRIED EGG
- Add the remaining 1/2 tsp of oil to your pan and heat at medium.
- Add your eggs and cook as desired then remove from the heat.
AVOCADO
- While your bread is toasting, and eggs are frying, mash your avocado with your chili powder and kosher salt.
AVOCADO TOAST WITH FRIED EGG AND THYME MUSHROOMS
- Assemble your toast by spreading the avocado mixture on first, layering with the mushrooms, and placing an egg on each slice of toast.
- Sprinkle a bit of fleur de sel on your toasts.
- If you’ve made a sunny side up egg, I recommend breaking the yolk so all the deliciousness spreads onto your toasts before eating.
