Scones invoke strong associations for me. The first time I ever ate a fresh scone was during high tea at a fancy hotel. I loved how the delicious pastries were not quite brunch, and yet not a dessert either. Depending on what you top them with, scones can be so versatile. The best scones I’ve ever purchased are from one of my favourite brunch spots in the city. My best friends and I have made it a tradition to go for brunch, then grab some beautiful scones to eat later in the day with some great takeout coffee. No matter how full we are, we can’t resist purchasing a batch.
When I first decided to make my own scones, I had no problem finding recipe ideas with various flavour combinations. What all these recipes were lacking however, was the fluffy buttery layers of my favourite brunch spot. Through some trial and error, I was able to recreate the beautiful texture I craved. This Fluffy Scone Recipe has a golden brown outside, a fluffy inside, and buttery layers punctuated by beautiful wild blueberries. One bite into these delicious scones and I promise you’ll feel as though you’re in your favourite brunch spot!

INGREDIENTS FOR THE BEST FLUFFY SCONE RECIPE
All the ingredients for these scones are easy to source from any local grocer.
Blueberry Scones
- 4 cups All Purpose Flour
- 2/3 cup and 2 tbsp White sugar
- 2 tbsp and 2 tsp Baking powder
- 1/2 tsp White vinegar
- 1/2 tsp Salt
- 1 cup Unsalted butter cold
- 2 Large eggs
- 1 cup and 4 tsp Milk whole or 2%
- 2 cups Blueberries frozen
Egg Wash
- 1 Egg
- 1 tbsp Water
- White sugar to taste
CAN I USE DIFFERENT BERRIES?
You can substitute other berries in place of blueberries, however their water content might change the texture of your scones, so be cautious.
ARE SCONES THE SAME AS BISCUITS?
There seems to be some debate as to what exactly the difference is between a British scone, and a biscuit from the USA. The general consensus is that scones are richer, heartier and more buttery, while biscuits are lighter and airier. Scones are served with afternoon tea or brunch, while biscuits tend to be served as a savoury side to a meal.
INGREDIENT SUBSTITUTIONS
CAN I USE MARGARINE INSTEAD OF BUTTER?
I wouldn’t recommend using margarine in this recipe. A large part of what makes these scones so fluffy is the cold butter that is grated between each layer. As the butter melts, steam pockets are created, aerating the dough.
CAN I USE FRESH BLUEBERRIES?
Unfortunately not. In order to ensure exceptionally fluffy scones, you must use frozen berries only. As the blueberries heat in the oven, they release steam which creates air pockets in the scone.

COOKING DIRECTIONS
There is nothing more delicious than a beautiful fresh scone straight out of the oven. The trick to making The Best Fluffy Scone Recipe is in the technique. First, always keep your butter cold. Second, use a gentle hand when mixing, and touch your batter as little as possible to keep it cold. Last, laminate your dough! The inspiration for this technique is to fold the butter into the dough similar to the method used when making croissants: by folding the dough, you create beautiful fluffy layers for your blueberries to nestle into.

This recipe cannot be prepared in advance.
These scones can be kept at room temperature for two days at most, and can easily be frozen in an airtight container.

Ingredients
Blueberry Scones
- 4 cups All Purpose Flour
- 2/3 cup and 2 tbsp White sugar
- 2 tbsp and 2 tsp Baking powder
- 1/2 tsp White vinegar
- 1/2 tsp Salt

- 1 Egg
- 1 tbsp Water
- White sugar to taste
Instructions
Blueberry Scones
- Preheat oven to 350 F
- Whisk together the flour, sugar, baking powder and salt.
- Grate 1/3 of the butter into the bowl and gently mix.
- Pour the milk into a measuring cup, add the eggs and vinegar, and whisk together.
- Add the milk mixture to the bowl and gently mix together with your fingers.
- Turn the batter out onto a lightly floured surface.
- Gently form it into a rectangle and flour as needed.
- Grate 1/3 of the butter onto the dough.
- Fold the dough in half.
- Gently roll out to approximately one inch thickness, lightly flouring if needed.
- Grate the last 1/3 of the butter onto the dough.
- Fold the dough in half.
- Gently roll out to approximately one inch thickness, lightly flouring if needed.
- Pour one cup of blueberries onto the dough and lightly press into the surface.
- Fold the dough in half.
- Gently roll out to approximately one inch thickness, lightly flouring if needed.
- Pour the second cup of blueberries onto the dough and lightly press into the surface.
- Fold the dough in half.
- Gently roll out to approximately two inch thickness, lightly flouring if needed.
- Divide into rectangles. I make between 10 and 12.
Egg Wash
- Mix the egg and water in a small dish.
Completed Blueberry Scones
- Brush each scone with egg wash using a pastry brush.
- Sprinkle sugar as desired on each scone.
- Bake the scones on a lined baking sheet for about 23-25 minutes.
- Remove from the oven when the scones are a light golden colour.
- Move the scones to a cooling rack when finished.

This is one of my favorite recipes! I once ran out of Baking Powder, and a great subtitute was some plain greek yogurt. I was surprised by the taste, but it was still the best recipe ever!!
