Nothing says brunch like a stack of pancakes fresh off the pan. Pancakes have become a weekend staple in my home. In fact, my kids love them so much that I’m constantly trying to come up with new ways to serve them. These delicious Mango Pancakes with Strawberry Sauce combine some of our favourite fruit in a warm and satisfying breakfast treat. The soft and fluffy pancakes are studded with juicy chinks of mango and fried in delicious coconut oil. These beautiful flavoured pancakes are then finished by a drizzle of juicy strawberry sauce. These pancakes are like a tropical fruit smoothie on a plate.

INGREDIENTS FOR MANGO PANCAKES WITH STRAWBERRY SAUCE

All the ingredients for these delicious pancakes are easy to source from any local grocer.

Mango Pancakes

  • 1 1/2 cups All Purpose Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tbsp Brown Sugar
  • 1 tsp Vanilla Extract
  • 1/4 tsp Fine Sea Salt
  • 1 1/2 cups Buttermilk
  • 1 Large Egg
  • 2 tbsp Unsalted Butter
  • 1 1/2 cups Frozen Mango, finely chopped
  • 2 tbsp Coconut Oil

Strawberry Sauce

  • 2 cups Frozen Strawberries
  • 2/3 cups Water
  • 1/4 cup White Sugar
  • 1/4 tsp Cornstarch

WHAT IS BUTTERMILK?

Buttermilk is a fermented dairy drink. It is thick, creamy, and has a sour undertone. It adds a depth of flavour to baked goods, while the acidity helps to aerate them.

WHAT IS VANILLA EXTRACT?

There are many ways to add vanilla to your baked goods. Vanilla extract is made by soaking vanilla pods in alcohol to draw out their flavour. It creates a highly concentrated liquid that is perfect for flavouring your pancakes.

CAN I MAKE THESE LACTOSE FREE?

Although I have yet to find lactose free buttermilk, you could create some by making a substitute with whole lactose free milk.

INGREDIENT SUBSTITUTIONS

CAN I USE FRESH MANGO INSTEAD OF FROZEN IN THE PANCAKES?

You can definitely use fresh mango if you wish. Frozen mango is easier to source in Canada at times which is why I chose to use it in this recipe.

CAN I USE FRESH STRAWBERRIES INSTEAD OF FROZEN IN THE SAUCE?

You should use frozen berries for this recipe as they will break down easier in your filling. If you don’t have frozen berries, you could certainly use fresh but you will be cooking for longer.

IS THERE A SUBSTITUTE FOR BUTTERMILK?

It is very easy to make a buttermilk substitute. Simply pour 1 1/2 tablespoons of vinegar into a measuring cup and fill it to the 1 1/2 cup mark with full fat milk. The key to a good substitute is using milk with some fat to better approximate the creaminess in real buttermilk.

CAN I USE A DIFFERENT OIL TO FRY THE PANCAKES?

I used coconut oil to fry the pancakes because I thought it’s tropical flavour would best compliment the fruit in this recipe. If you’d rather use a different oil, avocado, canola, or sunflower would all work just as well.
