This Juicy Lemon White Wine Chicken is easy and full of tangy and garlicky flavours complimented by a delicious BBQ char.

When it begins to warm up outside the last thing I want to do is stand in front of a hot oven or stove. In beautiful summer weather I just want to cook outside. One of my favourite things to cook on the barbeque is this Lemon White Wine Chicken. It’s delicious, healthy, flavourful, and cooks up quickly: everything you want in a summer meal.

This Juicy Lemon White Wine Chicken was created using ingredients I I always have in my kitchen. It’s incredibly easy to put together, and uses minimal equipment to prepare. After marinating in the fridge this chicken becomes beautifully flavourful. Its juicy tangy, garlicky interior is perfectly contrasted with the char from the barbecue. It cooks up extremely quickly, and if the chicken is marinated in advance this incredible meal easily comes together in under fifteen minutes.

INGREDIENTS FOR LEMON WHITE WINE CHICKEN

All the ingredients for this delicious Chicken are easy to source from any local grocer.

  • 1 1/2 lbs Chicken Thighs, boneless skinless (about 10)
  • 1/2 cup White Wine
  • 3 cloves Garlic
  • 1/2 cup Extra Virgin Olive Oil
  • 1/2 tsp Kosher Salt
  • a few turns Black Pepper

CAN I MAKE THIS WITHOUT A BARBECUE?

If you don’t have a barbecue you can make this delicious chicken on the stove top in a heavy bottomed pan or in cast iron. You won’t get the same charred flavour that you get from a barbecue, but it will still taste delicious. I would suggest cooking the chicken on medium high to get a similar finish.

CAN I MAKE THIS WITHOUT ALCOHOL?

I wouldn’t suggest leaving the wine out of this dish entirely because it adds a lovely acidity to the marinade. However, if you are unable to use alcohol, there are a number of de alcoholized wines that would work.

WHAT KIND OF WINE SHOULD I USE?

I would suggest that you use a dry wine for this recipe. Pinot Grigio works well.

CAN I USE OLD WINE IN MY MARINADE?

People often say that they have an open bottle that’s starting to go off, so they’ll just use it for cooking. This makes no sense to me. The wine imparts beautiful flavour to this delicious chicken, so why would you use a bottle that’s starting to sour? You wouldn’t! That said, you certainly don’t need to use an expensive bottle specifically for this meal. Simply use something you enjoy the taste of, because that is the flavour that will be imparted to your dish.

INGREDIENT SUBSTITUTIONS

CAN I SUBSTITUTE ANOTHER MEAT FOR CHICKEN?

This recipe would work with turkey breast as an alternative to chicken.

CAN I SUBSTITUTE CHICKEN BREASTS FOR CHICKEN THIGHS?

If you’d prefer, you can substitute chicken breasts for thighs in this recipe without issue. I prefer using thighs because they have more flavour, and stay juicier.

CAN I USE PREPACKAGED LEMON JUICE INSTEAD OF FRESH FRUIT?

Prepackaged lemon juice has its uses but I never buy it. It won’t ruin this recipe, but it would affect the taste. This recipe relies on fresh lemon flavour so I would suggest using it if at all possible.

  1. Marinate your chicken for at least one hour to ensure lots of flavour.
  2. Use only freshly squeezed lemon juice.
  3. Use fresh dry white wine.

MAKE AHEAD STORAGE

You can marinate your chicken several hours in advance if you’d like to save time when you cook this meal.
