This Greek Chicken Marinade with Potatoes recipe is a one pan meal that results in deliciously flavourful chicken and fluffy yet crisp potatoes.

The flavours in this Greek Chicken Marinade with Potatoes are reminiscent of a souvlaki dinner, however the cooking method couldn’t be more different. This delicious one pan wonder was inspired by an Indian traybake recipe by the incomparable Nigella Lawson. Although it takes some preparation and preplanning, all the ingredients in this tasty meal bake in one dish simultaneously in an hour making it a beautifully simple weekend meal.

This Greek Chicken Marinade with Potatoes was created using ingredients I I always have in my kitchen. It’s very simple to put together, and uses minimal equipment to prepare. The key to this delicious meal is allowing sufficient time to marinate the chicken. If given enough time in the fridge, the chicken becomes beautifully flavourful. The minty oregano marries beautifully with the tangy yogurt, bright lemon, and zesty garlic. By baking the entire dish in a single tray, the chicken cooks in it’s own juices, keeping it incredibly moist. The potatoes are crisp on the outside, while staying fluffy and soft on the inside. The result is a perfectly cooked meal served in one pan on your table within an hour.

INGREDIENTS FOR GREEK CHICKEN MARINADE WITH POTATOES

All the ingredients for this delicious Chicken are easy to source from any local grocer.

Greek Chicken

  • 6 Chicken Thighs
  • 1 cup Plain Yogurt
  • 1 tsp Oregano, minced
  • 1/2 tsp Kosher Salt
  • 1/2 Lemon, juiced
  • 2 cloves Garlic

Roasted Potatoes

  • 1 tsp Kosher Salt
  • 4 cloves Garlic
  • 2 tbsp Extra Virgin Olive Oil
  • 1/4 cup Water
Pour the water over the potatoes and place the marinated chicken on top.

WHAT KIND OF PAN SHOULD I USE?

I would recommend using a large rimmed baking sheet for this dish. Normally I roast potatoes in stoneware, but this meal needs to be spread out in a shallow pan to allow the potatoes and chicken to spread out.

CAN I MAKE THIS FASTER?

By giving your chicken ample time to marinate in the fridge you are not only infusing it with flavour, but also ensuring it will be beautifully moist. I would not suggest skipping this step.

WHAT KIND OF YOGURT SHOULD I USE?

Any brand of plain, unsweetened yogurt will work in this recipe.

Bake for an hour until the potatoes are golden brown.

INGREDIENT SUBSTITUTIONS

CAN I SUBSTITUTE ANOTHER MEAT FOR CHICKEN?

This recipe would work with turkey breast as an alternative to chicken.

CAN I SUBSTITUTE CHICKEN BREASTS FOR CHICKEN THIGHS?

If you’d prefer, you could substitute chicken breasts for thighs in this recipe. I prefer using thighs because they have more flavour, and stay juicier.

CAN I USE BONE IN, SKIN ON CHICKEN THIGHS?

If you’d prefer, you could substitute bone in, skin on thighs in this dish. They may take longer to cook, so just ensure your juices run clear or a meat thermometer reads 165 F.

CAN I USE PREPACKAGED LEMON JUICE INSTEAD OF FRESH LEMON?

Prepackaged lemon juice is convenient, but I don’t tend to buy it. It won’t ruin this recipe, but it would affect the taste. This recipe relies on fresh lemon flavour so I would suggest using it if at all possible.

CAN I SUBSTITUTE DRIED OREGANO FOR FRESH?

You could use dried oregano if you are unable to get fresh, but the result won’t be as tasty. Fresh herbs are always more flavourful.

MAKE AHEAD STORAGE

You can marinate your chicken several hours in advance if you’d like to save time when you cook this meal.
