These Roasted Garlic Smash Potatoes have the qualities of a french fry, but are made with the ease of a skin on roasted potato.

I created these delicious Roasted Garlic Smash Potatoes in an effort to switch things up one day. My go to recipe is a simple and delicious roasted potato, but these take that tasty side dish to a whole other level. They are not quick to prepare, but they are so delicious that I don’t think you’ll mind. They were a huge hit with my family, and they have become a go to side dish when time allows.

These Roasted Garlic Smash Potatoes are incredibly simple and contain only four ingredients that I always have in my kitchen. They have the qualities of a french fry, but are made with the ease of a skin on roasted potato. They are deliciously salty and garlicky, with a soft fluffy inside and a crisp golden brown outside. The key to making these potatoes absolutely amazing is allowing them to ‘fry’ on high heat until their smashed outsides are browned with great crunch. I promise that if you make these potatoes they will become one of your favourite sides!

INGREDIENTS FOR ROASTED GARLIC SMASH POTATOES

All the ingredients for these delicious potatoes are easy to source from any local grocer.

  • 6 medium Yukon Gold Potatoes
  • 1 cup Avocado Oil
  • 1/2 tbsp Kosher Salt
  • 2 cloves Garlic

CAN I PRE BOIL MY POTATOES?

If you’d like, you can pre boil your potatoes before making this dish. Raw cut potatoes begin to become discoloured quickly after being exposed to air. Covering them in water is one way to prevent that from happening. Pre boiling your potatoes will only save about 10 minutes so I would suggest making them fresh if possible.

WHAT ARE YUKON GOLD POTATOES?

Yukon Gold potatoes are a yellow fleshed potato with yellow to light brown skin. They were developed in Canada in the 1960’s and as such, are a relatively recent breed. They are characterized by thin smooth skin which I tend to leave on while cooking. I like using Yukon Gold potatoes because they are roast up beautifully with a crisp exterior and fluffy interior. They are not too starchy for baking, and not too dry for mashing: they are the perfect compromise.

WHY DO YOU USE AVOCADO OIL?

Avocadoes are full of healthy fat which makes them a lovely source of oil. Avocado oil also has a very high smoke point, which makes it perfect for roasting at high temperatures. Finally, it has a neutral taste so it won’t flavour your food.

DO I HAVE TO BOIL MY POTATOES FIRST?

Absolutely. In order to make this delicious dish you will need to smash them prior to roasting: you can’t smash a raw potato.

INGREDIENT SUBSTITUTIONS

CAN I SUBSTITUTE ANOTHER KIND OF POTATO FOR YUKON GOLD?

Yes, there are definitely other potatoes that will roast beautifully. There are many different potato varieties, but not all will work equally well for roasting. Many potato varieties will advertise their suggested uses on the bag. You want to look for drier potatoes for roasting, as they will cook up fluffy on the inside and crisp on the outside.

CAN I SUBSTITUTE POWDERED GARLIC FOR FRESH?

As always, I recommend fresh garlic over powdered. It has a stronger brighter flavour. However, in a pinch powdered garlic will work as well.

CAN I USE A DIFFERENT KIND OF OIL?

Any neutral flavoured oil with a high smoke point will work well in this recipe. I’d recommend Canola, Vegetable, or Peanut Oil.

COOKING DIRECTIONS

These Roasted Garlic Smash Potatoes are very simple to make as long as you follow a few important tips:

  1. Boil your potatoes until fork tender but not fully cooked.
  2. Roast your potatoes on high heat.
  3. Don’t skimp on the oil!

MAKE AHEAD STORAGE

If you’d like, you can pre boil your potatoes, simply store them in an airtight container in the fridge. I would not recommend doing this for more than a day as they may start to become discoloured.

The finished potatoes can be stored up to three days in the fridge in an airtight container, but I would strongly recommend eating these fresh as reheated potatoes can become grainy.
