These Roasted Crispy Cauliflower Tacos combine caramelized cauliflower, pickled onions and creamy cilantro yogurt!

Who doesn’t love tacos? Layers of delicious flavour, all wrapped up in a soft tortilla shell: perfection! Love of tacos seems to be a universal truth, but that love is divided into two camps: hard shell and soft shell. Although I love tortilla chips, I’ve never enjoyed hard tacos as I find them difficult to eat, overly messy, and awkward to fill. Luckily my family feels the same, so we always use soft shells for our tacos. We also prefer flour tacos to traditional corn shells in our family, so that’s what I used here. If your family prefers the heartier texture of a corn tortilla you are welcome to use that in this recipe instead.

These delicious Roasted Crispy Cauliflower Tacos combine two of my favourite things: caramelized cauliflower and hearty tacos. In my opinion, these are the best cauliflower tacos around! The caramelized cauliflower is hearty, seasoned, and flavourful. The pickled onions add a beautiful tart crunch, while the cilantro yogurt sauce adds creaminess and yet another layer of flavour to this delicious meal. Served with crumbled Cotijo cheese, these sumptuous tacos are a satisfying meal that will satisfy any vegetarian or meat lover.

INGREDIENTS FOR CRISPY CAULIFLOWER TACOS

All the ingredients for these tacos are easy to source from any local grocer.

Roasted Cauliflower

  • 1/4 cup Avocado Oil
  • 1 head Cauliflower
  • 1 1/2 tsp Chili powder
  • 1/8 tsp Garlic Powder
  • 1/8 tsp Onion Powder
  • 1/8 tsp Dried Oregano
  • 1/4 tsp Paprika
  • 3/4 tsp Ground Cumin
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 Lemon, juiced

Quick Pickled Onion

  • 1 Vidalia Onion
  • 2 Lemons
  • 1 Lime

Yogurt Sauce

  • 2 tbsp Plain yogurt
  • 1 tbsp Lime juice
  • 1 tsp Chopped cilantro
  • 1 pinch Chili powder
  • 1 pinch Cumin powder
  • 1 pinch Kosher salt
  • 4 Soft Shell Tacos
  • 4 tbsp Cotija cheese for serving
  • 2 tbsp Fresh cilantro

CAN I MAKE THIS LACTOSE FREE?

Absolutely! Simply substitute lactose free cheese or leave the cheese out entirely.

CAN I MAKE THIS LESS SPICY?

If you’d like, you can reduce the amount of chili powder and omit the chili flakes.

ARE TACOS AND BURRITOS THE SAME THING?

Tacos are smaller tortillas that are filled, folded in half, and served in multiples in one serving. Burritos are larger, often contain rice, and are rolled into a cylinder that is closed on both ends. Because of their larger heartier size, burritos are normally served one per meal.

WHAT KIND OF CHEESE SHOULD I USE?

I’ve made these tacos with Mexican Cotija. Mexican cheese is obviously a more traditional topping for tacos, but you can use whatever type of cheese that you’d prefer. I find that salty, sharp cheeses work best on these delicious tacos, so you could even use Feta in a pinch!

CAN I DUPLICATE THIS RECIPE?

Absolutely. You can easily double, or even triple this recipe. Just make sure you use a roasting pan big enough to allow your cauliflower to properly caramelize in the oven.

INGREDIENT SUBSTITUTIONS FOR ROASTED CAULIFLOWER TACOS

CAN I SUBSTITUTE ANOTHER VEGETABLE FOR CAULIFLOWER?

Cauliflower works well in this dish because it caramelizes beautifully. You can substitute sweet potato if you wish to get this delicious caramelized flavour from another vegetable.

CAN I MAKE THESE VEGAN?

I personally think the dairy elements add another level to these delicious tacos, however if you’d like you can serve these with vegan cheese and substitute the yogurt for avocado.

CAN I USE A HARD SHELL TACO INSTEAD?

You can certainly use a hard shell taco instead of soft if you’d prefer.

CAN I USE PACKAGED LEMON AND LIME JUICE INSTEAD OF FRESH CITRUS?

Prepackaged lemon and lime juice won’t ruin this recipe, but they would definitely affect the taste. These delicious cauliflower tacos rely heavily on the fresh lemon and lime flavour so I would suggest using them if at all possible.

COOKING DIRECTIONS FOR ROASTED CAULIFLOWER TACOS

These Roasted Crispy Cauliflower Tacos are incredibly simple to prepare and delicious, provided you follow a few rules:

  1. Roast your cauliflower until it’s browned and caramelized.
  2. Make your pickled onions in advance so they have time to marinate
  3. Always use fresh lemons, limes, and cilantro

MAKE AHEAD STORAGE

You can prepare your pickled onions up to three days before you make this meal. I like to keep a container in the fridge.

Both the cauliflower and any extra pickled onion can be stored for up to three days covered in the fridge. I wouldn’t recommend storing the completed tacos in the fridge, however.

Serve the tacos with cheese, pickled onion, a drizzle of yogurt sauce, and fresh cilantro.

Roasted Crispy Cauliflower Tacos

  • 4 Soft shell tortillas
  • 4 tbsp Cotija cheese crumbled
  • 2 tbsp Fresh Cilantro

Instructions

Roasted Cauliflower

  • Preheat the oven to 375 F.
  • Cut the cauliflower into florets by cutting at a 45 degree angle into the stem, then removing the florets.
  • Place the florets into a roasting pan.
