I love hosting my friends and family so I’m always trying to come up with new and exciting things to serve. These Savory Goat Cheese Mushroom Palmiers were inspired by one of my favourite flavour combinations: goat cheese, mushrooms and fresh thyme. Thyme is one of my favourite herbs, something about it’s vibrant, earthy, slightly peppery flavour makes it a welcome addition to my Bolognese, Avocado Toast, and Fried Chicken Burger recipes to name a few. It’s fantastic when paired with meat, and is equally delicious with anything mushroom. It’s absolutely delicious, and once you get the hang of destemming the tiny leaves from their woody stalk I guarantee you’ll be adding it to many of your dishes as well.

INGREDIENTS FOR SAVORY GOAT CHEESE MUSHROOM PALMIERS
All the ingredients for this savory palmier appetizer are easy to source from any local grocer.
- 2 Portabello Mushrooms, minced
- 2 tbsp Extra Virgin Olive Oil
- 2 sprigs Fresh Thyme
- 1 sheet Puff Pastry
- 1 pinch Fleur De Sel
- 140 grams Goat Cheese, crumbled
WHAT IS A PALMIER?
A traditional palmier is a french pastry made from puff pastry, butter, and sugar. They are named after their shape: a palm leaf.
IS GOAT CHEESE THE SAME AS CHEVRE?
Yes. Chevre is the French word for female goat, and is the French word for cheese made from goat’s milk.
IS PUFF PASTRY THE SAME AS PHYLLO DOUGH?
Definitely not. Puff pastry is a laminated dough made with many layers of butter. Phyllo has no butter, and foods made with Phyllo get their flakey texture from layers of the dough baked on top of one another. Both are delicious, but they are definitely not the same.
INGREDIENT SUBSTITUTIONS
CAN I USE A DIFFERENT KIND OF CHEESE?
If you’d like, you can use a different kind of semi soft cheese in this recipe. Feta would also work nicely.
CAN I USE A DIFFERENT TYPE OF MUSHROOM?
Absolutely. I love Portabellos so I use them often, but any type of mushroom would be delicious.
CAN I USE DRIED THYME INSTEAD OF FRESH?
Fresh thyme has a much more potent flavour than dried. I would strongly suggest using fresh in this recipe.
CAN I USE LOW FAT CHEESE?
These are a special treat. They are meant to be an appetizer, or one component of a party spread or charcuterie board. I’d suggest it is not the dish to cut calories on. Low fat cheese is never quite as delicious as the full fat version.

- Parchment Paper – I highly recommend lining your pan with parchment paper as it makes cleanup from your delicious appetizers much easier.

- Use full fat goat cheese
- Give your rolled pastry time to chill in the fridge before slicing it into palmiers.
- Use fresh thyme and mushrooms.
MAKE AHEAD STORAGE
There is nothing you can prepare in advance for this recipe.
These Savory Goat Cheese Mushroom Palmiers are best served hot and fresh out of the oven and do not keep well as a leftover.

Savory Goat Cheese Mushroom Palmiers
Equipment
- Baking sheet
- Parchment Paper
- Kitchen knife
- Cutting Board
- Small pan
Ingredients
- 2 Portabello Mushrooms minced
- 2 tbsp Extra Virgin Olive Oil
- 2 Sprigs Fresh Thyme
- 1 Sheet Puff Pastry
- 1 pinch Fleur De Sel
- 140 grams Goat Cheese crumbled
- 1 Egg
- 1 tbsp Water
Instructions
- Roll out the puff pastry until about 10 x 11 inches.
- Sautee the minced mushrooms with olive oil for 10 minutes on medium heat then set aside.
- Sprinkle the goat cheese, mushrooms, and thyme leaves onto the dough.
- Using one of the short ends, roll the dough towards the center, then stop.
- Do the same with the other side until they meet in the middle and form a log.
- Place the roll into the freezer for 20 minutes to firm up while you preheat your oven to 375 F.
- Slice the roll into 16 palmier slices.
- Mix the egg and water together.
- Brush the egg wash onto each palmier and sprinkle them with Fleur De Sel.
- Bake for 18 minutes until golden.

Great question Pamela! While these will puff up while baking, they won’t expand too much. 1-1.5 inches should be sufficient to ensure the air circulates and they are able to puff up. Anneke

Thanks for the question jthc! They can absolutely be prepared in advance and frozen, but I wouldn’t take them out too far in advance. I would take them out while preheating the oven, and they should be sufficiently thawed for baking.
